True Lemon Vinaigrette

True Lemon is crystallized real lemon, which means it cooks. One packet, good olive oil, and a spoon of dijon make a bright vinaigrette with no lemon to juice and no bottle to shake.

Ingredients

  • 1 tablespoon warm water
  • 1 teaspoon dijon mustard
  • 6 tablespoons good olive oil
  • A pinch of salt and a few grinds of pepper
  • 1/2 teaspoon honey (optional, for a rounder edge)
Method

    Dissolve the packet in the warm water. That is your lemon juice, no lemon required.

    Whisk in the dijon and the honey, if using, until smooth.

    Stream in the olive oil while whisking until the dressing thickens and holds together.
