True Lemon Vinaigrette
True Lemon is crystallized real lemon, which means it cooks. One packet, good olive oil, and a spoon of dijon make a bright vinaigrette with no lemon to juice and no bottle to shake.
- 1 packet True Lemon Original in the collection →
- 1 tablespoon warm water
- 1 teaspoon dijon mustard
- 6 tablespoons good olive oil
- A pinch of salt and a few grinds of pepper
- 1/2 teaspoon honey (optional, for a rounder edge)
- 01
Dissolve the packet in the warm water. That is your lemon juice, no lemon required.
- 02
Whisk in the dijon and the honey, if using, until smooth.
- 03
Stream in the olive oil while whisking until the dressing thickens and holds together.
- 04
Season with salt and pepper, then taste it on a leaf of whatever you are dressing rather than off a spoon.
- 05
Use it on greens, grain bowls, or roasted vegetables. It keeps a week in a jar and loosens with ten seconds of shaking.
